What CIA ProChef is
CIA ProChef is the Culinary Institute of America's training site for people who cook for a living. Its About page welcomes visitors to "the Culinary Institute of America’s website for foodservice professionals" and says "CIA has been setting the industry standards for over 75 years." The online culinary training is the entry point: the ProChef digital video series and the Plant-Forward Kitchen Training and Certification course, both delivered online and aimed at kitchens and schools that need to train staff and students outside a classroom. Around that core, the same site runs ProChef Certification in three levels, dated professional development courses, a free video discovery series, and recipe and technique videos hosted by CIA chef-instructors. The footer lists CIA locations in Hyde Park, New York; Napa and St. Helena, California; San Antonio, Texas; and Singapore.
The ProChef digital video series
The core product is what the training page calls the "industry-acclaimed ProChef® digital video series." Developed with the Culinary Institute of America, it "consists of 20 short courses that teach the foundational skills and culinary knowledge." The pitch is to the person running training rather than to the individual cook. The section opens with "Support your staff and students," and the page says the "flexible online curriculum can complement any manner of existing training programs" while it "enables you to reduce the financial and logistical costs of traditional classroom-based learning."
That makes the series a training library for foodservice operations and culinary programs. A training manager can put the 20 courses underneath an existing onboarding plan as the foundations layer, and a culinary instructor can assign them alongside classroom teaching. Because the courses are short and delivered online, they do not depend on gathering a team in one room at one time. Each program on the training page carries a "Register for the course!" link.
Plant-Forward Kitchen Training and Certification
The second online program is The Plant-Forward Kitchen Training and Certification, which the training page says "is included in ProChef® online training solution." The page describes it as preparation for a seismic and lasting shift toward plant-forward, sustainable cooking. The syllabus runs, in the page's words, "From understanding the challenges of sustainability to the fundamentals of nutrition, food science, and cooking at scale." It is pitched at experienced chefs as well as newer cooks: the page says the program is meant to raise the skills and confidence "of even veteran professional chefs."
The course sits beside other plant-forward material on the site. The Quick Bites section links a documentary, "The Asian Plant-Forward Kitchen: Korea," and the videos page introduces Menus of Change, whose Principles of Healthy, Sustainable Menus give the foodservice industry guidance drawn from nutritional and environmental science, consumer trends and projected demographic shifts.
On language, the training page states: "All courses are available in English and Latin American Spanish." For kitchens where Spanish is the working language of the line, that is a practical point in the program's favor.
Certification and professional development
The About page lists the wider ProChef training offer under Professional Training and Development: Video-Based Culinary Training, Hospitality Academy, ProChef® Certification at Levels I, II and III, ProChef® Professional Development Courses, Custom Training and Certification, and a Free Professional Chef Discovery Series. The three certification levels give cooks a progression tied to the CIA name, and Custom Training and Certification is listed as its own service for organizations whose needs go beyond the standard courses. The site also links a Statement of Accreditation from its About and Subscribe pages.
The home page carries a calendar of upcoming courses with fixed dates, each built around a cuisine or a craft. Contemporary Charcuterie: Tradition, Innovation, and Modern Craft runs January 11-15, 2027. Southeast Asian Cuisine: Balance, Contrast, and Bold Layered Flavor follows on January 20-22, 2027. Courses on Northeastern Mexican cuisines, North African cuisines, and the Southern European cuisines of Italy, France and Spain fill February and March 2027. Unlike the on-demand video series, these are scheduled courses for chefs who want a few concentrated days on one subject.
Free videos, recipes and the Discovery Series
Much of the site is open to anyone. The videos page describes "informative videos featuring on-trend recipes, technique demonstrations, world cuisines, and more," hosted "by CIA chef-instructors and other culinary experts." The playlist includes dishes such as Watermelon Khichdi, Almond Choux au Craquelin and Grilled Red Grape and Gorgonzola Flatbread, and a featured recipes section adds a watermelon shrimp poke bowl, almond biscotti three ways, and black grape sorbet with goat cheese mousse and honey tuile.
The CIA ProChef Discovers programs, which the About page lists as the Free Professional Chef Discovery Series, group videos by theme: Almond Butter and Chocolate Master Class, Asian for a New Generation, The Professional Chef Discovers European Products, Grapes Make the Plate, Almonds in European Baking and Pastry, and Watermelon Adds Wow to Menus. The Cooking with European Products series features CIA Chef Rebecca Peizer, who "blends her familial cooking traditions with the flavors of Europe" in dishes such as Moussaka Mosaic and Seasonal Cabbage-and-Noodles. Many of these programs center on a single ingredient, so they double as menu development material for working chefs. The home page also runs features for institutional kitchens, such as a piece on the global cuisines and "gateway flavors" driving college and university foodservice trends.
Around the training
The same site carries the CIA Industry Leadership Conferences, CIA Consulting, which it describes as "Culinary consulting services that deliver results," and the ProChef SmartBrief, a newsletter of industry news and trends delivered daily. The CIA's Digital Media team, presented as its Content Studio, offers services from website development to webcasting, online marketing and online education. The About page also lists the CIA's professional master's degree programs in Food Business, Sustainable Food Systems, Wine and Beverage Management, Culinary Therapeutics and Culinary Arts, which sit outside ProChef itself.
The training pages publish no prices for the video series or the plant-forward course; registration starts from the course links.
Who it suits
CIA ProChef suits a training lead in foodservice: a restaurant group, a hotel or catering kitchen, a college dining operation, or a culinary program that wants a structured foundation course from the CIA to sit next to its own training. The 20-course video series covers the basics, the plant-forward course adds sustainability, nutrition and cooking at scale, and the English and Latin American Spanish versions make both usable in bilingual kitchens. Cooks who want a recognized progression have the three ProChef Certification levels, and working chefs who want ideas rather than a course can use the free Discovery Series and recipe videos. It is a less natural fit for a home cook looking for a hobby class, since the whole site addresses foodservice professionals, and someone after the depth of a full culinary education would look at the CIA's degree programs instead.
